Meat, red meat. Steak, steak and potatoes. Chops, burgers, roasts, cutlets, sausages. When I was young, food was meat. Meat, potatoes, and a vegetable, but centrally meat. Meat was American food. Even now, these photographs are always named after that central piece of meat. Tomatoes might be the star of the photo, but meat is the title. Meat is what I’m eating.
